My FAV snack- goat cheese pineapple

I'm just about finished unpacking / organizing everything from school and I've settled into a good work routine, so now I'm back to really focusing on my health; which for me is completely focused around what I eat. A good workout always helps too but I notice a major difference in my body and health after cleaning up my eating. So that's why I want to share one of my favorite snacks. I know it's going to sound super weird, but goat cheese & pineapple on french bread just works ( seriously you're going to have to trust me ). My roommates at Purdue were super unconvinced too... you're not the only one ha but guess what?! They tried it and loved it.

I first heard about this food combo from my mom when I was younger and I've been making it ever since. The best part? It only takes FIVE MINUTES. If you know me, you know I don't like to put that much time into my food so this is very ideal. I'm more of a 'make a turkey sandwich' kind of person than a 'cook an entire chicken' kind of person, you feel me??

So if you're anything like me, you'll appreciate the efficiency of this snack. Plus, you only need 4 ingredients:

+ Goat cheese ( crumbles )

+ Pineapple ( I use pre-sliced in a can )

+ Oil olive

+ French Bread


Use as many french bread slices as you want ( I used four ), pour olive oil on top, sprinkle with goat cheese crumbles, bake at 350 degrees for 5 minutes, top with pineapple ( I like mine chilled ) and eat up!

Seriously does not get any easier.

The flavors work so well together. I'll make a bunch of slices and eat it for a light lunch.

Also French bread has some pretty awesome health benefits. It contains Folate, which is needed for the normal growth of new cells in the body, including red blood cells. Plus, French bread has iron which produces white blood cells, works as an antioxidant for the immune system and helps carry oxygen throughout the body.

Olive oil is incredible for the body. It is believed to reduce inflammation and may have beneficial effects on genes connected to cancer. Olive oil contains Vitamins E and K as well as plenty of antioxidants. Does the body so. much. good.

How about goat cheese? It is rich in vitamin A, B, D, riboflavin, calcium, iron, magnesium and potassium.

Then pineapple supports the immune system because it contains 50 percent of the daily recommended value of vitamin C.
